At Seokhwa, Hanwoo is grilled not over charcoal but on a thick, hot stone plate. Our name says it: 石 (stone) and 火 (fire). Here's how to enjoy it.

Why stone
A thick stone plate holds heat and releases it evenly. The meat never touches an open flame, so it cooks through gently before the outside burns, with no soot from charcoal. Coated with our house-made beef tallow, the outside turns crisp while the inside stays juicy.
Who grills?
For international guests, our staff grill the beef from start to finish. Stone-plate grilling is easy to overdo, and overcooked Hanwoo loses its best texture.
Tips
- 1++ Hanwoo is most tender and juicy around medium-rare
- Brisket is thin and cooks fast — grill it with chives and bean sprouts (extra plate ₩3,000)
- Grilled mushrooms (₩8,000) get sweeter on the stone
Many ways to dip
Try kelp salt (kelp, garlic and sea salt), garlic-chili sauce, whole-grain mustard and mustard-green kimchi.
Finish with soybean stew rice
Pour the Jeju sea snail & Hanwoo soybean stew (₩9,500) onto the hot stone plate and add kelp rice (₩1,000).
